This book is vegetarian, not vegan, but a lot of the recipes are easily adaptable (she puts cheese on lots of things, but there is usually enough flavor that you can just skip the cheese and it's still tasty). I made a few recipes and they seemed simple and the instructions pretty easy to understand. The recipes are written in a paragraph format, not step-by-step lines, which bothered the S.O. She uses sustainable flours that you don't normally see in cookbooks (lots of teff), which I wasn't sure where to find, but I like the idea (and I like injera, so I hope that I would like the teff recipes).

Not for the beginner as some recipes are a little vague, especially when it comes to comparable quantities (x amount of onions make y amount of cups when sliced). I disagreed with some overly complex steps, but I do have to say the soup we tried making was decent (not great) for only having a water base. This book is not vegan, but you can make substitutes.

This is my favorite gluten-recipe book! Love that it approaches food from a whole foods perspective..

The amaranth-quinoa-coconut pancakes are outstanding!

This book looks fantastic. I didn't have time to make any of the recipes, but there is a great variety that will be appreciated by people on CF diets. Lots use rice flour, so if you are sensitive to that, you will have to choose other recipes from more expensive sources, such as almond flour. But it might be worth it for a favorite, missed food.
