This is a book for people who don't know how to peel a carrot. Some recipes, nothing very original. If you need such basic info, YouTube is a better resource, with complete how-to videos.

My goal as of lately is to use local and in season vegetables in my cooking but I often get stuck on how to prepare and cook vegetables I'm unfamiliar with. This cookbook provides simple step-by-step pictures on how to cut, prepare, and cook a wide variety of vegetables. It even informs you of what season they are available in and what pairings work best. This cookbook is a must for anyone looking to add more veggies to their meals or learn how to show locally and seasonally!

Offers all you need to know to get started selecting and preparing veggies. Even if you are an experienced cook, there are some excellent recipes scattered throughout.

If you don't know a romanesco from a rutabaga, this is the book for you. The book covers selection, preparation, slicing, dicing and cooking.

I love looking at cookbooks and most often I just skim. This is worth a longer perusal. It's one of the most informative and useful cookbooks I've read in a long while. The illustrations and explanations are top notch. Highly recommended.
